A silky and creamy cooled soup served in tall shooters is an easy and stunning appetizer for your next party. When hosting a party and preparing food to serve, it is crucial to me that I have some make-ahead bites for the occasion. I definitely don’t like to spend my time in the kitchen when I’m hosting.
Not one to serve anything basic, I am always on the hunt for simple and ordinary ingredients that I can turn into something full of flavor and beauty.
So, my Chilled Cucumber and Cilantro Soup is the perfect party appetizer for a warm get-together. The flavor is unbeatable and the presentation is unique. And I promise you, you can’t sip just one.
There’s really nothing to it.

And do this. When serving, I like to put a chive in a tall shot glass and pour in my soup. The color is so fresh! But the taste is even better! These soup shooters are the prettiest addition to the appetizer table at my Swine and Dine: A Masculine 40th Birthday Party.

Do you have a quick and simple chilled soup?
- 1 jalapeno seeds removed and roughly chopped
- 1/2 shallot roughly chopped
- 1 garlic clove
- 1 english cucumber roughly chopped
- ½ cup cilantro
- 1 tbsp lime juice
- 1 cup plain greek yogurt
- ¼ cup sour cream
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp coriander
- 1 tbsp olive oil
- chives for garnish

Place first 12 ingredients in a blender and blend until smooth. Refrigerate until serving.

To serve, place one long chive in a tall shot glass and carefully pour in the soup right from the blender pitcher.
This is a delicious main course too. Serve in soup bowls and top with an extra dollop of sour cream and fresh minced ingredients from the soup as garnish. Also try serving this with some fresh cooled shrimp or lump crab meat.

This looks so refreshing. I love cilantro so much but unfortunately, my husband doesn’t. I’m going to make and see if I can make a non-cilantro version for him. This is definitely perfect for a summer BBQ day 🙂
