A tangy lemon and garlic marinade makes this grilled Greek Chicken extra special. With the addition of fresh oregano, this flavorful dish comes together for a quick weeknight meal.Â
I’m sort of waiting for the whining to start about this meal…I’m worried that I might turn to it much too frequently.
It just happens to be one of those recipes I make time and time again, especially when I’m feeling stumped on dinner or too tired to think. So far, I haven’t heard any complaints about eating it too often. Fingers crossed.
I start by brushing my  Lemon Garlic Vinaigrette on my chicken. I’ve made this with whole chicken breasts, thighs, and kebabs and each way works beautifully. Look at all that fresh garlic!
Then I press fresh minced oregano onto the chicken and let it rest for at least 30 minutes before throwing it on the grill.
 The marinade makes this chicken so tender and flavorful! My kiddies love it!Â
I serve the chicken with my Tzatziki Cucumber Salad, fresh feta, and warm pitas and it is perfect!Â
What is your favorite chicken marinade?

- 1.5 lbs chicken breasts or thighs cut into 1 inch chunks and skewered (optional)
- fresh oregano chopped
- 1/2 cup olive oil
- 4 tbsp lemon juice
- 2 garlic cloves minced
- 1 tsp salt
- 1/4 tsp pepper
- 1 tsp sugar

Combine all the ingredients for the marinade and set aside. Place chicken on skewers.

In a shallow dish, pour the marinade over the chicken.

Press fresh oregano onto chicken.

Let rest for 30 minutes.

Grill until nicely charred but not dry.
For a shortcut, buy a Greek vinaigrette at the store and use for your marinade.Â
