The moment the kiddies get home from school, it is go time. Between soccer, basketball, running club, lyrical class, ballet class and after-school clubs, I spend many evenings driving all over town dropping off and picking up my little ones.
On hectic evenings like this, I need a simple and nutritious meal I can turn to and this chicken dish never fails.
Gathering for dinner is so important to us. So no matter what time it is, Bill and I always make it a point to spend dinner together talking with the kiddies about their day.
I love the first question Bill always asks them. “What was the best part of your day?”
Not going to lie though, sometimes an argument erupts. They’ll argue about who gets to tell their story first. It’s a great thing when your children have “best moments” in their day to report, isn’t it?
Between story telling, the kiddies gobble up this scrumptious chicken, even grabbing a spoon and devouring the sauce.
The fresh herbs in this dish add an abundance of flavor. Chicken thighs are a favorite because they maintain their moisture no matter how you cook them. I fry these thighs in a large oven proof skillet, like this one, first to give them a nice golden crust.
After removing the thighs from the skillet, I sauté the garlic for a minute than add the wine and the herbs. A splash of cream elevates the richness of this dish. You won’t be disappointed by this aroma. Once I add the chicken back to the sauce I add some lemons and pop it in the oven for 15-20 minutes and prepare a quick side dish.
With the extra sage, I make some sage brown butter and pour it over some toasted gnocchi.
Every bite of chicken is full of fresh vibrant flavors of herbs, white wine and garlic. A total winner.

Tell me about your favorite family meal after a hectic day.
- Family pack of skin on and bone in chicken thighs
- olive oil
- Desired amount of fresh mixed herbs like sage thyme, rosemary and parsley
- 4 garlic cloves minced
- 1 cup white wine
- splash of cream
- salt & pepper to taste

Pre-heat the oven to 300°.

Sprinkle the chicken with salt and pepper.

Prepare the herbs by giving them a rough chop.

In an oven-proof cast iron skillet, heat the oil and fry the chicken until the skin is golden brown on both sides.

Remove the chicken from the pan and add the garlic and allow to fry for a minute.

Pour in the wine and scrape the bottom of the pan to deglaze.

Add the herbs and cook for a minute.

Add a splash of cream and stir to combine.

Add the chicken and its juices back to the pan and bake for 15-20 minutes until cooked through.

Is it 250 Fahrenheit degrees? Or is it supposed to be 450 F?

250 just like it says. You’ll already begin the cooking process by browning them on the stove top, so unless you have really gigantic pieces of chicken, you’ll just need to finish the cooking at a low heat in the oven for about 20 minutes.

Hi Deb! I give it a quick boil. As soon as they come to the top, I transfer the gnocchi to a hot olive oil and butter coated pan. Then carefully toss until browned on both sides.

Mmmm, this is just my kind of dish! I do something similar but use half a cup of white vermouth instead of wine, it’s delicious!
