With the right tools and a little meal prep, you can have tender and delicious steak tips any night of the week. Fall seems to be far busier than any other season for us. We are adjusting to new routines and schedules and my kitchen counters are smothered once again with notebooks, school forms, and back-to-school projects. I’m also getting back into my groove of being my kids’ personal Uber driver, a homework helper and a why-did-we-wait-til-the-last minute-poster-making extraordinaire. 

Hectic afternoons and evenings like this means I have to be on top of meal prep and this is why my freezer real-estate is highly treasured in my kitchen. Cooking from the freezer is invaluable and convenient, saving me from multiple mid-week grocery runs and dinner-time exhaustion.

One of our favorite ready-to-go dinners pulled right from our freezer is marinated steak tips. Steak tips come from the bottom sirloin or the flap meat. By marinating this meat, the muscle fibers break down, giving the meat incredible tenderness and flavor.To save some money, we buy our meat in bulk at our local warehouse club. With just a short amount of time cutting the meat and mixing up various marinades, I can take my family on a culinary flavor tour of the world any night of the week. Whether our cravings are for a traditional Steakhouse, Greek, Asian, Mexican, or Indian-spiced flavors, our tastebuds are satisfied. It’s so easy. When it’s dinner time, the steak has already been cut into bite-sized pieces, making the cooking process quick and fuss-free. Having steak tips on hand gives me some time to breathe on the busiest of nights…like Wednesdays. Wednesdays are the pits.Because we are buying in bulk and freezing our steak tips, we have to ensure our meat doesn’t spoil, so we turn to the FoodSaver® FM5200 Vacuum Sealing System and multi-layer, BPA-free vacuum-seal bags.

Making custom sized bags is so simple with this system. I just unlock the lever and pull the bag to the desired length. Once I flip the lever back to the seal position, the bottom seal for the next bag is created. The red seal light will pulse while the seal is automatically created. Finally, I slide the bag cutter across to cut the bag free and begin to fill my bag with the steak tips and the marinade.

Once the open end is visible through the window and I’ve lined up the edge with the drip tray, I just press and release the vacuum seal bar with both hands. The vacuum seal window will close, grasp the bag, and begin to seal it. Once the red light turns off, the sealing is complete and the machine will release the sealed bag automatically.

Tender Marinated Steak Tips from Your Freezer

With the right tools and a little meal prep, you can have tender and delicious steak tips any night of the week. 

  • Sirloin Steak Tips

Steakhouse Marinade

  • 1 tsp dijon mustard
  • 2 garlic cloves (minced)
  • 1/2 tsp onion powder
  • 1 tbsp soy sauce
  • Worcestershire sauce
  • balsamic vinegar
  • oil

Greek Marinade

  • 1/4 cup vegetable oil
  • 1/4 cup red wine vinegar
  • 1/4 cup lemon juice
  • 4 garlic cloves (minced)
  • 1 tbsp oregano
  • 2 tbsp fresh mint (finely chopped)
  • 1 tsp red pepper flakes
  • 1/2 tsp kosher salt
  • 1/2 tsp pepper

Asian Marinade

  • 1/2 cup vegetable oil
  • 1/2 cup soy sauce
  • 1 tbsp sesame oil
  • 1/3 cup sugar
  • 2 tbsp ginger (minced or grated)
  • 6 garlic cloves (minced)
  • 2 tbsp sesame seeds

Mexican Marinade

  • 1/2 cup vegetable oil
  • 1/2 cup red wine vinegar
  • 1/2 cup cilantro (chopped)
  • 3 garlic cloves (minced)
  • juice of 1 lime
  • 1 tbsp cumin
  • 1 tbsp oregano
  • 3 tsp tsp chili powder
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp cayenne pepper (optional for heat only)

Indian-spiced Marinade

  • 1/2 cup vegetable oil
  • 1/2 cup lemon juice
  • 1/4 cup shallot (minced)
  • 2 tbsp garam masala
  • 1/2 tsp salt
  • 1/2 tsp pepper

Marinades

  1. For all marinades, mix all ingredients together in a bowl.

  2. Place cubed steak tips in a Food Saver bag. 

  3. Pour the marinade in the bag and gently use your hands to ensure that all the meat is covered. 

  4. Seal the bag using the Food Saver. 

  5. Label and date the bag. Freeze. 

To Cook Steak Tips

  1. Transfer the steak tips from freezer to refrigerator at least a day ahead. 

  2. Preheat your grill or grill pan to high heat. 

  3. Remove steak tips from marinade and sear on one side until nicely browned, 4 to 6 minutes.

  4. Flip the steak tips and grill on the other side an additional 4 to 6 minutes. 

  5. Remove and let rest at least 5 minutes before serving.
