Hot and Spicy Quick Pickled Red Wine Onions

Ingredients

  • 2 red onions julienned
  • 1/2 cup red wine
  • 1 cup red wine vinegar
  • 2-3 garlic cloves thinly sliced
  • 2 teaspoons kosher salt
  • 1 tsp pepper
  • 1 tbsp sugar
  • 1 teaspoon red pepper flakes
  • water for topping off

Instructions

  1. Thinly slice the onions with a sharp knife.
  2. Add the onions to a mason jar.
  3. Pour red wine and vinegar on them to cover the onions.
  4. Add all the ingredients.
  5. If necessary, top with enough water that the onions are covered.
  6. Cover and shake.
  7. Let sit at room temperature for 30 minutes to 1 hour.
  8. Enjoy right away or cover and chill.
  9. Drain onions before using.
  10. Will keep in the fridge for up to one month.
