Smashed Cucumber and Butter Bean Salad with Tarragon Buttermilk Dressing

Ingredients

Dressing

  • 1/4 cup plain Greek yogurt
  • 1/4 cup buttermilk
  • 1 tsp Dijon mustard
  • 1 tsp fresh lemon juice
  • 2 tbsp fresh chopped tarragon
  • 2 tbsp fresh chopped chives
  • 1/2 tsp Kosher salt

Salad

  • 1/2 tsp pepper
  • 6 mini cucumbers cut into thirds and smashed with the back of a knife
  • 6 radishes thinly sliced
  • 15 ounce can butter beans drained and rinsed
  • salt and pepper to taste

Instructions

  1. Combine all ingredients for the dressing in a bowl. Stir until well combined.
  2. Cut your cucumbers in halves or thirds. Place a large knife on top of the cut cucumber with the blade facing away from you. Lightly crush the cucumber and tear it into chunks (cucumber should "crush" into 3-4 pieces)
  3. Add the cucumber, radishes, and the butter beans to a bowl.
  4. Top with the dressing and carefully stir to coat.
  5. Top with salt and pepper to taste.
