Scrambled Egg Breakfast Toast with Tomato and Chive Goat Cheese

Breakfast, brunch, lunch or even a mid-day snack, this scrambled egg toast is a savory treat.

Ingredients

  • 2 eggs
  • Splash of water about 2 tbsp
  • Fresh cut chives desired amount
  • 1 tomato thinly sliced
  • goat cheese spread about 2 ounces but adjust to taste
  • Salt and pepper to taste
  • 1/2 - 1 tbsp butter or olive oil

Instructions

  1. Whisk 2 eggs in a bowl.
  2. Add water and whisk again.
  3. Add butter or olive oil to a pan over medium-low heat. (Let butter melt)

  4. Pour in the eggs and cook them low and slow.
  5. Remove eggs from heat before they're finished cooking to account for carryover cooking. They should still look loose and a bit runny.
  6. Toast 2 slices of bread.
  7. Mix goat cheese and cut chives together.
  8. Spread the cheese on the toast and top with tomato, eggs, and more chives.
