Pepperidge Farm Farmhouse® Hearty White Bread
1 tomatothinly sliced
1carrotpeeled into long ribbons
1yellow pepperthinly sliced
1handful or more of sprouts
1seedless cucumberpeeled into long ribbons
2handfuls of spinach leaves
1/2red onionthinly sliced
1/2purple cabbagethinly sliced
Chickpea Spread
1can chickpeasrinsed and drained with shells removed (optional)
1/3cupplain Greek yogurt
1/2avocado
1tbsplemon juice
1garlic clove
1-2tbspfresh parsley
1/2tspsalt
1/2tsppepper
Instructions
Chickpea Spread
Add all ingredients to a food processor. Chop and mix until blended but still chunky.
Sandwich
Toast the bread.
Spread a generous amount of the chickpea spread on each slice.
Layer your fresh veggies on top of one slice.
Top with the second slice.
Recipe Notes
Chickpea spread ingredients can be added to a bowl and smashed with a fork instead of food processor. This makes a generous portion of chickpea spread, so expect leftovers. The spread also makes a tasty dip for fresh veggies. Adjust vegetable quantities to your liking. This sandwich is open to interpretation so customize it with your favorite vegetables.
