Make ahead egg casserole

Overnight Egg Casserole

Prep this rich and creamy egg casserole the night before a special morning brunch.

Ingredients

  • 6 eggs
  • 1 tbsp. butter
  • 4 oz. sour cream
  • 1/4 cup evaporated milk
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 6 slices cooked and crumbled bacon
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Cook bacon desired way.
  2. In a mixing bowl, beat eggs.
  3. Stir in evaporated milk, salt and pepper.
  4. Melt butter in pan and pour in eggs.
  5. Cook on low heat until set but still moist.
  6. Cool eggs in a greased casserole dish.
  7. When cool, gently stir in sour cream.
  8. Top with bacon and cheese.
  9. Cover and refrigerate overnight.
  10. Cook at uncovered 300 degrees for 20-25 minutes.

Recipe Notes

Make this recipe the day before.
When doubling or tripling the recipe, use less sour cream than recipe calls for.
Bring to room temperature before baking.
