Mini Black Bean Wonton Quesadillas

Crispy wonton wrappers packed with savory Mexican flavors are an easy finger food snack for your next get-together.

Ingredients

  • 8 ounce refried black beans or regular refried beans
  • 1/4 tsp cumin
  • 1/4 tsp chili powder
  • 1/8 tsp cayenne pepper optional for heat
  • 2 scallions green parts only, sliced thin
  • 1/2 cup chopped fresh cilantro reserve some for garnish
  • 1 cup shredded cheese cheddar or Monterey Jack
  • wonton wrappers about 24
  • 1 tbsp olive oil
  • salsa for serving
  • sour cream for serving

Instructions

  1. Place first 7 ingredients in a bowl and carefully fold and stir to combine. 

  2. Assemble your wontons on a surface for easy filling. 

  3. Scoop about 1 tablespoon of the bean mixture onto half of the wonton. 

  4. Fold the wonton over and lightly press down, without sealing the edges, to form a triangle. 

  5. Heat the olive oil in a large skillet over medium-high heat. 

  6. Add the folded wontons to the skillet. You may need to work in batches so that you don't overcrowd. 

  7. Cook uncovered about 1 to 2 minutes per side until the cheese melts and the wonton is lightly browned and crispy.  

  8. Transfer to a platter and sprinkle with additional cilantro. Serve immediately with your favorite salsa and sour cream.
