Loaded Taco Chicken Salad

This chicken salad has all your favorite taco toppings and is an easy and flavorful lunch idea.

  • 1 lb chicken breast cubed and cooked
  • 1/2 red pepper diced
  • 1/4 cup cherry tomatoes halved
  • 1/4 cup black olives sliced
  • 1/4 cup scallions green parts only
  • 1/2 cup cilantro chopped plus more for garnish
  • tortilla chips crumbled for garnish, optional
  • avocado slices for serving, optional


  • 1/2 cup plain yogurt
  • 1 tbsp chili powder
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/4 tsp cayenne pepper
  • 1/4 tsp chilpoltle chili powder optional


  1. Combine all ingredients for the dressing in a bowl and set aside.

  2. In another bowl, combine the chicken, red pepper, tomatoes, olives, scallions, and cilantro. Toss gently.

  3. Add the dressing to the chicken mix and carefully stir until well coated.

  4. Garnish with additional cilantro and crumbled tortilla chips for texure. Serve with an avocado.

Recipe Notes

Just like a taco, customize the "toppings" any way you'd like. 

Better if refrigerated for at least 30 minutes before enjoying.
