Heirloom tomatoes are so sweet in flavor and when paired with creamy, rich burrata and fresh basil, you’ll have the perfect little meal or a popular appetizer to please a crowd. It’s a chicken nugget kind of a night for the kids. Yes, I love to cook…but the week is long, it’s a Friday night and I’m sick of cooking for now.
Is it bad that Bill and I still want to munch on a tasty, non-freezer meal even though the kids are throwing down some frozen nuggets and a box of mac n cheese?
Well, we are going to regardless. So, if the season is right, our go-to, casually pick at, and share a bowl while we sit at the island kind of meal is always some juicy heirloom tomatoes topped with some creamy decadent burrata. It’s a bit like a date night in the kitchen when we have this. My honey, my better half, will scoop me up a piece of tomato and burrata and give me the “best” bite. Such love.
No doubt there will be an interruption from one of the girls, usually The Bean, shouting to us from the family room…”are you two going to kiss?”
Yes, yes we are, little one. Now scram.
While I have made this with regular old tomatoes, nothing beats the flavor and color of gorgeous heirlooms. I think the lumpier and bumpier the tomato, the better. After I chop these beauties up, I drizzle some good olive oil on them with some kosher salt and pepper. Just let them hang out and before you know it, the bowl will be filled with this amazing, tasty juice, perfect for dipping your crusty bread in. I top the tomatoes with fresh chopped basil, burrata, and if the mood hits, some of my extra special aged balsamic. This is perfection!! How much do you love heirloom tomatoes?
- Heirloom tomatoes
- Fresh chopped basil
- Good olive oil
- Kosher salt
- Aged balsamic, optional
- Grilled or toasted bread
- Roughly chop the tomatoes and add to a bowl.
- Coat with olive oil and sprinkle some kosher salt and pepper on top.
- Let sit for 10 minutes.
- Stir in fresh chopped basil
- Top with fresh burrata.
- Using the bread as your utensil, dip your bread in the juices and top it with tomato and burrata for the perfect bite.
