Bill gets his flavor-packed sandwich fix with my chickpea spread. Chickpeas are combined with creamy avocado, tart Greek yogurt, lemon juice, garlic and parsley in a food processor. I don’t over-mix it so that I keep some chunkiness for texture. This spread is deliciously nourishing!I get my salad fix with an abundance of rainbow veggies, thinly sliced and ready to add crunch and coolness. When paired with the chickpeas, these layers are so totally satisfying.

How do you craft your perfect sandwich?

- Pepperidge Farm Farmhouse® Hearty White Bread
- 1 tomato thinly sliced
- 1 carrot peeled into long ribbons
- 1 yellow pepper thinly sliced
- 1 handful or more of sprouts
- 1 seedless cucumber peeled into long ribbons
- 2 handfuls of spinach leaves
- 1/2 red onion thinly sliced
- 1/2 purple cabbage thinly sliced
- 1 can chickpeas rinsed and drained with shells removed (optional)
- 1/3 cup plain Greek yogurt
- 1/2 avocado
- 1 tbsp lemon juice
- 1 garlic clove
- 1-2 tbsp fresh parsley
- 1/2 tsp salt
- 1/2 tsp pepper

Add all ingredients to a food processor. Chop and mix until blended but still chunky.

Toast the bread.

Spread a generous amount of the chickpea spread on each slice.

Layer your fresh veggies on top of one slice.

Top with the second slice.
Chickpea spread ingredients can be added to a bowl and smashed with a fork instead of food processor.
This makes a generous portion of chickpea spread, so expect leftovers.
The spread also makes a tasty dip for fresh veggies.
Adjust vegetable quantities to your liking.
This sandwich is open to interpretation so customize it with your favorite vegetables.

What a fresh and healthy looking sandwich! Pepperidge Farm has so many wonderful foods to select from, and I love how they have worked to improve the softness of the bread. I prefer soft bread for sandwiches. Dry bread is never good!

Chickpeas are a great source of protein for non-meat eaters. I eat meat but sometimes like to just go green for a couple of days. This seems like such a simple recipe to make and it’s perfect for the warm weather. I love all the bright colours. Will def be trying this. TFS!
