- Pepperidge Farm Farmhouse® Hearty White Bread
- 1 tomato, thinly sliced
- 1 carrot, peeled into long ribbons
- 1 yellow pepper, thinly sliced
- 1 handful or more of sprouts
- 1 seedless cucumber, peeled into long ribbons
- 2 handfuls of spinach leaves
- ½ red onion, thinly sliced
- ½ purple cabbage, thinly sliced
- FOR THE CHICKPEA SPREAD:
- 1 can chickpeas, rinsed and drained with shells removed (optional)
- ⅓ cup plain Greek yogurt
- ½ avocado
- 1 tbsp lemon juice
- 1 garlic clove
- 1-2 tbsp fresh parsley
- ½ tsp salt
- ½ tsp pepper
- FOR THE CHICKPEA SPREAD:
- Add all ingredients to a food processor. Chop and mix until blended but still chunky.
- FOR THE SANDWICH:
- Toast the bread.
- Spread a generous amount of the chickpea spread on each slice.
- Layer your fresh veggies on top of one slice.
- Top with the second slice.
This makes a generous portion of chickpea spread, so expect leftovers.
The spread also makes a tasty dip for fresh veggies.
Adjust vegetable quantities to your liking.
