A colorful veggie sandwich is topped with a chickpea spread and loaded on Pepperidge Farm Farmhouse® Hearty White Bread for a perfect lunchtime treat.Marriage is not about one big compromise. It’s about a million teeny-tiny compromises that happen all day long. At least in our house, anyway.
Take lunchtime, for example. The Better Half loves a layered sandwich, stacked with flavorful meats and spreads. My lunchtime preference, on the other hand, would be a loaded salad topped with colorful and crisp veggies with a great bread on the side.
My Colorful Veggie Sandwich with Chunky Chickpea Spread is the ultimate lunchtime compromise for me and my husband and it is so easy to build.
Bill gets his flavor-packed sandwich fix with my chickpea spread. Chickpeas are combined with creamy avocado, tart Greek yogurt, lemon juice, garlic and parsley in a food processor. I don’t over-mix it so that I keep some chunkiness for texture. This spread is deliciously nourishing!I get my salad fix with an abundance of rainbow veggies, thinly sliced and ready to add crunch and coolness. When paired with the chickpeas, these layers are so totally satisfying.Crafting our perfect sandwich is not complete yet. We need an ideal base for these delicious layers. We need a bread that can hold up to the stacked grandeur of ingredients here and Pepperidge Farm Farmhouse® Hearty White Bread is the perfect choice.Pepperidge Farm Farmhouse® Hearty White Bread, with its new and improved taste, is what makes this sandwich truly incredible. This thick-sliced Farmhouse Hearty White Bread now has a softer texture and a fresh from the oven taste. This is definitely a bread that neither of us have to compromise on for our rainbow loaded sandwich. It is only available in select locations so head here to find it in a store near you and rediscover the warmth & comfort great bread can bring.
We like to toast the slices for even more added texture before loading on the spread and the veggies. This quality bread, combined with these colorful veggies and my flavorful chickpea spread is bursting with goodness at every layer. It’s really one of the best things to happen between two slices of bread. How do you craft your perfect sandwich?
- Pepperidge Farm Farmhouse® Hearty White Bread
- 1 tomato thinly sliced
- 1 carrot peeled into long ribbons
- 1 yellow pepper thinly sliced
- 1 handful or more of sprouts
- 1 seedless cucumber peeled into long ribbons
- 2 handfuls of spinach leaves
- 1/2 red onion thinly sliced
- 1/2 purple cabbage thinly sliced
- 1 can chickpeas rinsed and drained with shells removed (optional)
- 1/3 cup plain Greek yogurt
- 1/2 avocado
- 1 tbsp lemon juice
- 1 garlic clove
- 1-2 tbsp fresh parsley
- 1/2 tsp salt
- 1/2 tsp pepper
-
Add all ingredients to a food processor. Chop and mix until blended but still chunky.
-
Toast the bread.
-
Spread a generous amount of the chickpea spread on each slice.
-
Layer your fresh veggies on top of one slice.
-
Top with the second slice.
Chickpea spread ingredients can be added to a bowl and smashed with a fork instead of food processor.
This makes a generous portion of chickpea spread, so expect leftovers.
The spread also makes a tasty dip for fresh veggies.
Adjust vegetable quantities to your liking.
This sandwich is open to interpretation so customize it with your favorite vegetables.

This looks so delicious! I’m a big fan of the Mediterranean Veggie sandwich at Panera because it’s stacked with hummus and all kinds of veggies too! This looks like the perfect at-home alternative.

What a fresh and healthy looking sandwich! Pepperidge Farm has so many wonderful foods to select from, and I love how they have worked to improve the softness of the bread. I prefer soft bread for sandwiches. Dry bread is never good!

Chickpeas are a great source of protein for non-meat eaters. I eat meat but sometimes like to just go green for a couple of days. This seems like such a simple recipe to make and it’s perfect for the warm weather. I love all the bright colours. Will def be trying this. TFS!
Olive Jude says
Thank you so much! I am definitely a meat-eater too, but get these cravings for super crunchy, crisp sandwiches like this and this does not disappoint.
