Dress up a chicken salad with sweet blueberries and aromatic basil and turn it into a perfect tea sandwich fit for a princess. I was swept up in the hype of the royal wedding last week. Were you?I realize there are those that care a great deal about these nuptials and those that may actually roll their eyes at my sentence above. The draw for me is plain and simple. Weddings are joyful. They are sweet. A wedding day is a day that celebrates new life. It’s an optimistic day full of love. Who wouldn’t want to be a part of that?
My mom felt the same way about weddings, real or fictional. As a little girl, I distinctly remember her enthusiasm as she pulled the rocking chair up to the TV, sat me on her lap and we watched Diana walk down the aisle.
Luke and Laura’s nuptials delighted her. Remember that pop culture phenomenon? And every time we watched Maria walk down the aisle in The Sound of Music, my mom would get on her feet and sing along. She always said it was her favorite scene in the movie.
With my town’s tornado and loss of power last week (and the reason for the delay in this post), my girls and I were forced to view the wedding online. We did, however, get to enjoy my Blueberry Basil Chicken Salad Tea Sandwiches to get us in the spirit. Really, what is more proper than nibbling on bite size sandwiches and sipping tea to get royal wedding ready?The salad is draped in a tangy yogurt dressing that gets a touch of sweetness from honey. It is so light and delicious!
For simplicity and ease, I used a tender rotisserie chicken from the grocery store. To complement the juicy chicken, I added a little red onion and toasted pecans for crunch. I also tossed in fresh cut basil ribbons to enliven the salad.And finally, I added blueberries. The pop of sweetness pairs perfectly with the other ingredients and makes this salad fun and bright.

You’ll want to devour the salad as is (and we always do!), but for a tea, we couldn’t resist building dainty little sandwiches. Made with Pepperidge Farm Very Thin Bread, these were enjoyed in just two bites.
As a side note, the blueberries here are a nod to the bride, Meghan. She happens to be a Kappa Kappa Gamma sister just like me and my mom. I hope Meghan remembered her two shades of blue on her royal wedding day.

Did you watch the royal wedding?
- 1 rotisserie chicken or about 2-2 1/2 cups cooked chicken cut in small pieces
- 1 cup blueberries
- 1/4 cup toasted pecans roughly chopped
- 2 tbsp minced red onion
- 1/4 cup fresh basil chiffonade (cut into thin ribbions)
- Pepperidge Farm Very Thin whole wheat bread crusts cut off and halved
- 1/3 cup Greek yogurt
- 2 tbsp mayonnaise
- 1 tbsp honey
- 1 tbsp apple cider vinegar
- 1 tsp salt
- 1/2 tsp pepper

Combine all ingredients for the dressing in a bowl.

Stir and set aside.

Combine all ingredients for the salad in a bowl.

Pour the dressing over the salad and gently stir to evenly coat.

Serve as is or carefully spoon the salad onto a thin bread slice and top with another slice to make bite size tea sandwiches.
The salad is wonderful as is or spooned into lettuce cups too.
Better if refrigerated for at least 30 minutes before enjoying.

Ok seriously this looks so amazingly delicious. I love that this recipe uses Greek yogurt instead of mayo. And we just got blueberries in our CSA box this week. I think I’ll make this for a Memorial Day picnic ????
